The opening ceremony and brewing ceremony of the 21st China Shaoxing Rice Wine Festival were held here. As one of the representatives of 15 Shaoxing rice wine enterprises, our company participated in the rice wine brewing ceremony, and jointly swore to "be an honest man and make wine of conscience" to celebrate the beginning of winter brewing. Before and after the Lidong solar term, Shaoxing rice wine began to be fermented. From the beginning of winter to the beginning of the second year of spring, due to the low temperature and clear water, it can effectively inhibit the breeding of miscellaneous bacteria, ensure the smooth progress of the fermentation, and make the wine form a good flavor during the long-term fermentation at low temperature. It is the most suitable for making rice wine. During the period, people refer to this period as "winter brewing".
